Tope is excellent eating, it’s just a pity it’s becoming scarce in our waters. The more plentiful dogfish (up to a couple of pounds) can be treated in the same way, i.e. an overnight marinade of garlic, sea salt, parsley and olive oil then dusted with flour and pan fried for a few minutes.
